Group Chef Director, The Pig Group of Hotels
James is a local man who is a chef, forager and local food produce hero and is seen regularly on Country File, Britons Best Dish the Chefs, Julia Bradbury’s British Walks and National Parks with Caroline Quentin and the Caterer magazine.
He trained with Bournemouth & Poole College and the Academy of Culinary Arts and won a place at the Savoy in London, where he was apprenticed for three years. He went on to join Le Caprice Holdings under Mark Hix and stayed there until 2001 when he joined J Sheekeys where he rose to be Sous-Chef. He was later put in charge of the 6th floor restaurant at Soho House New York.
He later joined Whitley Ridge Hotel guiding it through the changes into the Pig group. In January 2014 James became Chef Director of the multi-award-winning Pig Group of Hotels, guiding through the opening of new restaurants and hotels in Studland and Bath and will be opening three new properties over the next 18 months in Kent, Arundel and Cornwall.
He is an Academician of the Royal Academy of Culinary Arts, board member for the sustainability committee, Annual awards of excellence committee & specialised chef programme. He is also chair for the BPC apprenticeship employer advisory board, A World Class Cheese Judge and Taste Awards Judge.
